Finally the day when I am writing my first blog post has come. I wanted to create a blog for a good few years now, but delayed it thinking that I am not ready and not feeling confident enough. But this year I finally decided to do it or to forget this idea at all. So here I am choosing what my first blog post should be…
I decided that I want to start with my classic waffles recipe that is one of my favorite things to make on those cozy weekend mornings. If you follow me on Instagram for a while now, you saw quite a few photos of these delicious goodies.
Golden, fluffy on the inside, crispy while still hot and melt-in-your-mouth – that is how I would describe them. Such a perfection while still warm and fresh out of the waffle iron. The batter is not very sweet, so you can add as many toppings as you want. I usually choose to eat them with homemade lemon curd, caramel sauce or maple syrup, as well as with homemade ice cream. I promise, you will not even want to go to these brunch places anymore, when you will start making these waffles!
Ingredients
- 450 ml (almost 2 cups) buttermilk
- 60 ml (4 tablespoons) unsalted melted butter or oil (not olive)
- 2 eggs
- 2-3 tablespoons sugar of your choice
- 2 teaspoons vanilla extract/sugar
- 256 grams (2 cups) all-purpose flour
- 4-5 teaspoons baking powder
- 1/4 teaspoon salt
Instructions
- In a large bowl lightly mix eggs with sugar and vanilla. No need for a mixer.
- Add buttermilk and melted butter/oil and mix well. If you choose to use melted butter, don't use it hot, because it will cook the eggs.
- In another bowl mix flour, baking powder and salt.
- Pour wet ingredients into the dry ones and mix well.
- Let the batter stay in the fridge while you preheat your waffle iron.
- The cooking time will depend on how powerful your waffle iron is and how much batter are you using for one waffle. I usually use a good scoop or small ladle.
- Cooked waffles should be golden and crispy. Try to not open your waffle iron before waffles are cooked because it can shrink it down.
- Serve waffles immediately. If you are not going to eat your waffle straight out of the waffles iron preheat your oven about 50 degrees Celsius (122 degrees Fahrenheit) and place waffles in one layer in the oven until you are ready to enjoy!
